Ingredients:
– 1 tbsp olive oil
– Half an onion, finely diced
– 500g lean beef mince
– 30g taco seasoning (store-bought or homemade)
– 1 tbsp tomato purée
– 4 medium flour tortillas
– 120g reduced-fat Cheddar cheese, grated
For the salsa:
– 60g cherry tomatoes, chopped
– Handful of fresh coriander
– Juice of 1 lime
– Optional taco seasoning: 1 tsp chilli powder, 1 tsp sweet paprika, 1 tsp garlic powder, 1 tsp onion powder, 0.5 tsp dried oregano, 0.5 tsp ground cumin, salt and pepper to taste
Method:
1. If making your own taco seasoning, combine all the seasoning ingredients.
2. Heat olive oil in a large frying pan over medium heat. Add the onion, then the beef mince, taco seasoning, and tomato purée. Cook for 8-10 minutes, stirring occasionally until fully cooked.
3. While the meat cooks, prepare the salsa by mixing chopped tomatoes, coriander, and a squeeze of lime.
4. Spread one half of each tortilla with the taco mince, cheese, and salsa. Fold over to close.
5. Place the quesadillas in the air fryer basket and cook at 180°C for 5 minutes, or until golden and crispy. Flip and cook for another 5 minutes.
6. Serve with your favorite dips, such as guacamole and soured cream.
