Students at Haberdashers’ Monmouth School received a unique opportunity to explore the culinary arts during a visit from Chef AJ, also known as Alistair Turner, on January 21, 2024. As the Commercial Director at Leith’s Education, Chef AJ introduced students to professional cooking methods and techniques, significantly enhancing their culinary skills. This school is notable for being the only institution in Wales to offer Leith’s Education courses, which are recognized for their high standards in food education.
Leith’s Education is well-regarded in the UK for providing accredited qualifications and comprehensive food education programs for students aged five to 18. During the workshop, Chef AJ collaborated with Year 13 students to prepare chicken birria tacos, focusing on essential skills such as knife techniques, seasoning, and proper chicken preparation.
One student expressed enthusiasm for the opportunity, stating, “I want to do a gap year and be a chalet girl for a few months, and having the Leith’s qualification will help me with that because it is really well recognized, and it will help me be more confident in the kitchen. It’s really nice to have Chef AJ here to watch us all cook and give us some inspiration.”
Chef AJ’s journey into the culinary world is unconventional. Initially, he studied architecture at university, but soon realized it was not his passion. He transitioned to the culinary field by completing the Leith’s culinary diploma in London, where he discovered his love for cooking. Following five years as a chef at Rick Stein’s renowned restaurant in Cornwall, he found his true calling in teaching. He subsequently became a food teacher and head of food at a school in Cornwall, ultimately returning to Leith’s Education to inspire the next generation of chefs.
This collaboration with Haberdashers’ Monmouth School not only provides students with hands-on experience but also opens doors to various career paths within the food industry. Students are encouraged to explore diverse roles, from food writing to working on luxury yachts or even becoming private chefs. By equipping them with practical skills, the program aims to foster confidence and competence in the kitchen, preparing students for future endeavors in the culinary arts.
The visit highlights the significance of programs like those offered by Leith’s Education in shaping aspiring chefs and enhancing their educational experiences. As students engage with industry professionals like Chef AJ, they gain valuable insights and inspiration that can influence their career choices.
